This October, ENSŌ Izakaya & Bar welcomes diners to discover the distinctive flavours of Hokkaido through a culinary collaboration with Park Hyatt Niseko Hanazono.
ENSŌ’s much-loved Saturday Brunch will offer special sessions on 24 and 31 October 2026. 

Guests can enjoy a generous buffet of sashimi, sushi, skewers and handcrafted Japanese delicacies, alongside interactive live stations. Specially for this collaboration, Chef Takayuki Uehara of Robata, the signature Japanese restaurant at Park Hyatt Niseko Hanazono, introduces a curated selection of Hokkaido-inspired creations, showcasing the region's prized seafood, vibrant seasonal flavours and freshly handcrafted specialties. Together, these exclusive additions offer guests a deeper taste of Hokkaido's rich culinary heritage.

To elevate your Hokkaido experience, enjoy three hours of free‑flow selected alcoholic beverages, perfectly paired to complement your brunch indulgence. Our Head Mixologist, Ivon, will also bring her rolling cocktail bar right to your table, letting you create your own bespoke drinks together with her.
